Five ingredients make me happy

 

Do you ever struggle to fix dinner? Sometimes I do because there are just the two of us and whipping up a huge meal just doesn’t make sense. My new bloggy friend, Rocks in My Dryer, is an Oklahoma girl and this week she held a Five Ingredients or Less recipe linky blog.

Over 400 bloggers showed up (at least as of Wednesday). It is a treasure trove of five ingredient or less (not counting salt, pepper, or water) main entrees, side dishes, and even desert recipes!

OK. I’ve got one. It’s called, “Millionaire Pie.” I just posted it for todays post http://karenlalaniz.blogspot.com. And the cool thing is it’s actually tied into the post I had intended to write today about a chance meeting between my father (a WWII veteran) and four little boys. Thanks for the idea and allowing me to participate. This is great! ~Karen

After the weekend insanity, maybe. :) But I’ll leave a favorite one here, if you don’t mind?

On a large sheet of foil, place a salmon fillet. Sprinkle liberally with dill. Top with a small jar of drained capers and either brown sugar or honey. Close up foil and bake at 350 till salmon flakes, or about 20 minutes. Mmmm!

1 lb. pasta (shells or penne work best but spaghetti works also)
1/4 lb. processed cheese, cubed or sliced
1 lg. can stewed or dice tomatoes
4-6 smoked sausages or 1 kielbassa ring (we like the turkey kind) cut into 1/2 inch medalions

Spoon juice from tomatoes in bottom of 9×13 baking dish. Layer pasta, tomatoes, sausage and cheese - repeat. Bake at 350 for appr. 35-40 minutes or until cheese is bubbly and dish is hot throughout. This also works well in the crockpot! My mom used to make this with bacon but the sausage is quicker, not to mention lower in fat.
